Preparing the Shrimp

    Coat the Shrimp

    In a medium bowl, combine the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and milk. Dip each shrimp into the egg mixture, then coat with the flour mixture, ensuring an even coating.

    Fry the Shrimp

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated shrimp in batches, frying for 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assembling the Po'Boy

    Prepare the Bread

    Slice the Gambino or French bread rolls in half lengthwise, but do not cut all the way through. Lightly toast them if desired.

    Layer the Ingredients

    Spread a generous amount of your chosen sauce on the inside of both halves of the bread. Layer the shredded lettuce, sliced tomatoes, onion, pickles, and fried shrimp inside the bread.

Serving

    Serve the Po'Boy

    Cut the sandwiches in half if desired and serve immediately with extra sauce on the side for dipping.
