Prepare the Chicken
Cut the chicken thighs into bite-sized pieces, and season with salt and black pepper.

Prepare the Sausage
Slice the smoked sausage into rounds.
Cooking

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute.

Brown the Chicken and Sausage
Push the sautéed vegetables to the side of the pot. Add the chicken pieces and sausage, cooking until browned on all sides.

Add Liquids and Spices
Pour in the chicken broth and add the diced tomatoes, Cajun seasoning, bay leaves, thyme, and additional salt and pepper. Stir to combine.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally.
Serving

Serve the Gumbo
Remove bay leaves before serving. Serve hot over cooked rice and garnish with sliced green onions and chopped parsley.
