    Soak the Beans

    Rinse the red kidney beans under cold water, then soak them in a large bowl of water overnight. Drain and set aside.

    Chop the Vegetables

    Finely chop the onion, green bell pepper, celery stalks, and garlic cloves. Set all the chopped vegetables aside.

    Cook the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

    Add Garlic and Seasonings

    Add the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper to the pot. Stir well and cook for an additional 2 minutes until fragrant.

    Add Beans and Broth

    Add the soaked and drained red kidney beans to the pot, followed by the vegetable broth. Stir everything together and bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the beans are tender. Stir occasionally and add more broth or water if necessary to prevent sticking.

    Cook the Rice

    In a separate pot, bring 2 cups of water to a boil. Add the long-grain white rice and a pinch of salt. Reduce heat to low, cover, and cook for about 18-20 minutes, or until the rice is fluffy and water is absorbed.

    Once the beans are cooked and tender, remove the bay leaves. Serve the red beans over a scoop of rice and garnish with fresh parsley.
