Preparation of Ingredients

  1. 1

    Slice the Ribeye

Thinly slice the ribeye steak against the grain into strips. This will ensure tenderness when cooked.

  2. 2

    Chop the Vegetables

Dice the onion and green bell pepper into small pieces. Slice the mushrooms if they are whole.

Cooking

  1. 3

    Cook the Steak

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced ribeye and season with salt and black pepper. Cook for about 3-4 minutes until browned and just cooked through. Remove from skillet and set aside.

  2. 4

    Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onions, green bell peppers, and mushrooms. Sauté for about 5-7 minutes until the vegetables are soft and caramelized.

  3. 5

    Combine Ingredients

Return the cooked ribeye to the skillet with the sautéed vegetables. Mix well and heat for an additional 2 minutes to combine flavors.

  4. 6

    Melt the Cheese

Place the provolone cheese slices over the beef and vegetable mixture in the skillet. Cover the skillet with a lid and let it cook for about 2-3 minutes until the cheese is melted.

Assembly

  1. 7

    Prepare the Rolls

Slice the hoagie rolls lengthwise without cutting all the way through, creating a pocket for the filling.

  2. 8

    Fill the Rolls

Spoon the cheesesteak mixture into each hoagie roll, making sure to get a good amount of meat, vegetables, and melted cheese.

Serving

  1. 9

    Serve Hot

Serve the Philly cheesesteaks while hot. You may also add additional condiments such as hot sauce or mayonnaise if desired.
