Combine Marinade Ingredients
In a large mixing bowl, combine olive oil, soy sauce, honey, minced garlic, Dijon mustard, black pepper, salt, paprika, and thyme. Whisk together until well blended.

Marinate the Pork Chops
Place the boneless pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
Cooking the Pork Chops

Preheat the Grill or Skillet
If grilling, preheat your grill to medium-high heat. If frying, heat a large skillet over medium heat and add a tablespoon of olive oil.

Cook the Pork Chops
Remove the pork chops from the marinade and let excess marinade drip off. Grill the pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C). If frying, cook for about 5-6 minutes per side, adjusting the time as necessary based on thickness.
