Prepare the Zucchini
Wash the zucchini thoroughly and cut off the ends. Slice each zucchini into long spears, approximately 1 inch wide.

Bread the Zucchini Spears
Dip each zucchini spear first into the flour, shaking off excess, then into the beaten eggs, and finally coat with breadcrumbs. Ensure each spear is well coated.
Frying Zucchini Spears

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until it's shimmering.

Fry the Zucchini Spears
Carefully place the breaded zucchini spears into the hot oil, working in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Cool
Once fried, transfer the zucchini spears to a plate lined with paper towels to drain excess oil.

Immediately sprinkle the fried zucchini spears with grated Parmesan cheese while they are still hot, allowing the cheese to melt slightly.

In a small bowl, combine mayonnaise, prepared horseradish, lemon juice, salt, and black pepper. Mix until smooth and well blended.
