Preparation
- 1
Prepare the Okra
Wash the fresh okra under cold running water and pat dry with a clean towel. Trim both ends of each okra pod and cut them into 1/2-inch slices.
- 2
Make the Batter
In a large bowl, combine the cornmeal, all-purpose flour, salt, black pepper, garlic powder, and cayenne pepper. Mix well until all dry ingredients are evenly incorporated.
- 3
Coat the Okra
Pour the buttermilk into a separate bowl. Dip each slice of okra into the buttermilk, allowing any excess to drip off. Then, transfer the okra to the bowl with the cornmeal mixture. Toss until the okra is well-coated with the batter.
Frying
- 4
Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and bubbles, the oil is ready.
- 5
Fry the Okra
Carefully add the coated okra slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until they are golden brown and crispy, turning occasionally for even cooking.
- 6
Drain and Serve
Using a slotted spoon, remove the fried okra from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
