Crust Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and resemble wet sand.

    Bake the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until golden brown. Remove from the oven and let cool while you prepare the filling.

Filling Preparation

    Beat the cream cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add sugar and sour cream

    Gradually add the granulated sugar and sour cream, mixing until fully combined. Scrape down the sides of the bowl as needed.

    Incorporate vanilla and eggs

    Add the vanilla extract and eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

    Pour filling into crust

    Pour the cream cheese filling over the prepared crust in the springform pan. Smooth the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 55-65 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

    Chill

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

    Prepare the topping

    Just before serving, rinse the fresh berries and pat them dry with a paper towel. In a small bowl, toss the berries with powdered sugar to lightly coat them.

    Serve

    Remove the cheesecake from the springform pan and place it on a serving platter. Top with the sweetened berries and slice to serve.
