    Prepare the Catfish

    Season the catfish fillets with salt, pepper, and a squeeze of lemon juice. Grill or pan-fry the fillets over medium heat for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from heat and let cool slightly.

    Chop the Vegetables

    Dice the tomato and slice the green onions. Set aside.

    Prepare the Cheese Mixture

    In a bowl, combine the shredded cheddar and mozzarella cheeses. Mix well and set aside.

    Assemble the Quesadilla

    On one half of each flour tortilla, spread a generous layer of tartar sauce. Then, layer the cooked catfish pieces, diced tomatoes, sliced green onions, green chiles, and the cheese mixture. Fold the tortilla over to create a half-moon shape.

Cooking

    Cook the Quesadilla

    Heat a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy and the cheese is melted.

    Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with additional tartar sauce and lemon wedges on the side.
