Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then remove from oven and let cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and beat until well combined. Mix in the buttermilk and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Finally, sprinkle in the cornstarch and mix just until combined.

Combine filling and crust
Pour the cream cheese filling into the cooled crust, smoothing the top with a spatula.

Prepare the fruit swirl
In a small saucepan over medium heat, combine the fresh strawberries or blueberries, granulated sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally until the fruit breaks down and releases its juices. Remove from heat and let cool slightly.

Create the swirl
Drop spoonfuls of the fruit mixture over the top of the cheesecake filling. Use a knife or skewer to gently swirl the fruit into the filling for a marbled effect.

Bake the cheesecake pie
Bake the pie in the preheated oven for 45-50 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then transfer to the refrigerator and chill for at least 4 hours or overnight.
