Prepare the Cheese and Pepperoni
Cut the mozzarella cheese into small cubes, about 1 inch in size. Set aside. If using string cheese, simply cut them into thirds. Stack 2-3 slices of pepperoni on top of each other and place a mozzarella cube in the center. Fold the pepperoni around the cheese and secure with a toothpick if necessary.

Setup the Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt, black pepper, and garlic powder in the third. Ensure the breadcrumbs are evenly mixed.

Bread the Pepperoni Bites
Take each pepperoni and cheese bundle and first coat it in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, roll it in the breadcrumb mixture until fully coated. Repeat with all bundles.

Fry the Bites
In a large skillet, heat olive oil over medium heat. Once hot, carefully add the breaded pepperoni bites in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.
