Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Add the bone-in chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In a shallow dish, whisk together all-purpose flour, cornstarch, paprika, cayenne pepper, salt, and black pepper. Set aside.

Bread the Chicken
Remove the marinated chicken pieces from the refrigerator. Allow excess marinade to drip off and dredge each piece in the prepared breading, making sure to coat thoroughly. Shake off any excess flour.

Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 10-12 minutes per side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

Drain and Serve
Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Let it rest for a few minutes before serving.
