    Prepare the Vegetables

    Slice the onion, mushrooms, and tomato. Rinse the spinach and set aside.

    Caramelize the Onions

    In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until they turn golden brown, about 10 minutes.

    Sauté the Mushrooms and Spinach

    Add the sliced mushrooms to the skillet with the onions and cook for another 5 minutes. Then add the spinach and cook until wilted, about 2 minutes.

    Prepare the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Pour the whisked eggs into the skillet and let cook for about 2-3 minutes until the edges begin to set.

    Add the Filling

    Once the omelet is set on the bottom, add the caramelized onions, mushrooms, spinach, diced tomatoes, and crumbled goat cheese to one half of the omelet.

    Fold and Serve

    Carefully fold the other half of the omelet over the filling. Let it cook for another minute, then slide it onto a plate. Serve warm.
