    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt, black pepper, and paprika, and cook for about 15-20 minutes until crispy and golden, stirring occasionally. Remove from heat and keep warm.

    Cook the Steak

    Season the Angus New York steak with salt and black pepper. In a separate skillet, heat 1 tablespoon of olive oil over high heat. Once hot, add the steak and sear for 3-4 minutes on each side for medium-rare, or cook to your desired doneness. Remove from heat and let it rest for a few minutes.

    Cook the Eggs

    In the same skillet where you cooked the steak, reduce the heat to medium. Crack the cage-free eggs into the skillet and cook to your preference: sunny-side up, over-easy, or scrambled. Season with salt and pepper.

    On a plate, serve the crispy breakfast potatoes alongside the steak and top with the cooked eggs. Garnish with chopped fresh parsley.
