Preparing the Crab Cakes

Mix the Ingredients
In a large mixing bowl, combine the Dungeness crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, Panko breadcrumbs, beaten egg, salt, and black pepper. Gently fold the ingredients together until well combined, being careful not to break up the crab meat too much.

Form the Cakes
Using your hands, form the mixture into patties about 2-3 inches in diameter. Place the formed crab cakes on a baking sheet lined with parchment paper. Cover and refrigerate for at least 30 minutes to help them hold their shape.

Cook the Cakes
In a large skillet, heat oil over medium heat. Once hot, carefully add the crab cakes, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
