    Peel and dice the potatoes into small cubes. In a pot of salted boiling water, cook the potatoes until tender, about 10 minutes. Drain and set aside.

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chorizo and cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add diced onions and bell peppers. Sauté until they are soft and translucent, about 5 minutes.

    In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the sautéed vegetables and cook, stirring gently, until just set.

    Add the cooked chorizo and potatoes to the eggs, stirring to combine. Cook for an additional 2-3 minutes to heat through.
