Method

Prepare the Fish

    Make the Batter

    In a bowl, mix the flour, baking powder, salt, and black pepper. Gradually whisk in the beer until smooth. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep fryer or large pot, heat the oil to 350°F (175°C).

    Batter and Fry the Fish

    Dip each fish fillet into the batter, allowing excess to drip off, and carefully place into the hot oil. Fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Fries

    Cut the Potatoes

    Cut the russet potatoes into fries. Soak them in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Drain and pat the fries dry. Heat the oil to 350°F (175°C) and fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Season with salt, paprika, and black pepper.

Prepare the Sauces

    In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, salt, and pepper. Mix well and adjust seasoning to taste.

    Make Cocktail Sauce

    In another bowl, mix together ketchup, horseradish, lemon juice, and Worcestershire sauce until well combined.
