    Prepare the Bacon

    In a skillet over medium heat, cook the Niman Ranch slab bacon until crispy, about 5-7 minutes. Remove from the skillet and place on a paper towel to drain excess fat.

    Mash the Avocado

    While the bacon is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding a pinch of salt and black pepper to taste.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet used for the bacon, add olive oil or butter and heat over medium-low. Pour in the egg mixture, swirling to coat the bottom of the skillet evenly.

    Add Fillings

    Once the eggs begin to set, add the crispy bacon, mashed avocado, and Pt Reyes Toma cheese on one half of the omelet. Cook until the eggs are fully set and the cheese is melted, about 2-3 minutes.

    Carefully fold the omelet in half over the fillings. Slide onto a plate and serve immediately with crispy potatoes on the side.
