Method

Steak Preparation

  1. 1

    Room Temperature

Take the Creekstone Irodori Wagyu strip loin out of the refrigerator and let it come to room temperature for about 30 minutes.

  2. 2

    Seasoning

Season the steak generously with salt and black pepper on both sides.

  3. 3

    Searing the Steak

Heat a cast iron skillet over high heat and add olive oil. Once the oil is shimmering, add the steak.

  4. 4

    Cooking

Sear the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness.

  5. 5

    Resting

Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Pommes Frites Preparation

  1. 6

    Preparing Potatoes

Peel the russet potatoes and cut them into thin sticks, about 1/4 inch thick.

  2. 7

    Soaking

Soak the potato sticks in cold water for at least 30 minutes to remove excess starch.

  3. 8

    Heating Duck Fat

In a heavy pot, heat duck fat over medium heat until it reaches 325°F (160°C).

  4. 9

    Frying

Drain and dry the potatoes thoroughly, then fry them in batches for about 4-5 minutes until they are golden and crispy.

  5. 10

    Seasoning Fries

Remove the fries from the duck fat and drain on paper towels. Season with salt immediately.

French Fried Onion Strings Preparation

  1. 11

    Slicing Onions

Slice the onion into thin rings.

  2. 12

    Soaking

Soak the onion rings in buttermilk for at least 30 minutes.

  3. 13

    Mixing Dry Ingredients

In a bowl, mix the flour, paprika, and salt together.

  4. 14

    Heating Oil

Heat vegetable oil in a deep skillet over medium-high heat.

  5. 15

    Frying Onion Strings

Dredge the soaked onion rings in the flour mixture, shaking off any excess, and fry them in batches until golden brown.

  6. 16

    Draining

Remove the onion strings and drain on paper towels.

Deluxxe Mayonnaise Preparation

  1. 17

    Mixing Mayonnaise

In a bowl, combine mayonnaise, minced garlic, lemon juice, and Dijon mustard.

  2. 18

    Whisking

Whisk together until smooth and well combined.

Duck Fat Gravy Preparation

  1. 19

    Melting Duck Fat

In a saucepan, melt the duck fat over medium heat.

  2. 20

    Making Roux

Stir in the flour and cook for about 2 minutes to create a roux.

  3. 21

    Adding Broth

Gradually whisk in the beef broth, ensuring there are no lumps.

  4. 22

    Thickening Gravy

Cook the gravy until it thickens, about 5-7 minutes, then season with salt and black pepper.
