Whipped Potato

    Prepare the Potatoes

    Peel and chop the russet potatoes into equal-sized chunks. Place them in a large pot and cover with cold water.

    Boil the Potatoes

    Bring the water to a boil over high heat. Once boiling, reduce to a simmer and cook the potatoes for 15-20 minutes or until fork-tender.

    Drain and Mash

    Drain the potatoes and return them to the pot. Allow to steam for a minute to remove excess moisture, then mash with a potato masher or ricer.

    Add Ingredients

    Mix in the truffle oil, shredded cheddar cheese, butter, heavy cream, salt, and black pepper. Whip until smooth and creamy.

Duck Fat Gravy

    Heat the Duck Fat

    In a small saucepan, heat the duck fat over medium heat until melted.

    Make a Roux

    Add the all-purpose flour to the melted duck fat and whisk continuously for about 2 minutes until it forms a smooth paste (roux).

    Add the Stock

    Gradually pour in the chicken or duck stock while whisking to prevent lumps from forming. Continue to cook for an additional 5-7 minutes until the gravy thickens.

    Season the Gravy

    Add salt and black pepper to taste, stirring well to combine.
