    Season the Steak

    Pat the ribeye steak dry with paper towels to remove excess moisture. Season both sides generously with kosher salt and black pepper. Let the steak sit at room temperature for about 30 minutes to enhance the flavor and tenderness.

Cooking

    Preheat the Pan

    In a large cast-iron skillet or heavy pan, heat the olive oil over high heat until it starts to shimmer. This should take about 2-3 minutes.

    Sear the Steak

    Carefully place the seasoned ribeye steak in the hot skillet. Sear for 4-5 minutes on one side without moving it, allowing a crust to form.

    Flip the Steak

    Using tongs, carefully flip the steak to the other side. Add the garlic cloves, fresh rosemary, and butter to the skillet.

    Baste the Steak

    As the steak cooks on the second side (another 4-5 minutes for medium-rare), tilt the pan slightly and use a spoon to baste the steak with the melted butter and cooking juices. Cook until the internal temperature reaches your desired doneness (130°F for medium-rare).

Resting

    Rest the Steak

    Remove the ribeye from the skillet and place it on a cutting board. Tent it loosely with aluminum foil and let it rest for about 5-10 minutes. This allows the juices to redistribute throughout the meat.

Serving
