    Prepare the Potatoes

    Peel the Russet potatoes and cut them into 1/4-inch thick fries. Rinse the cut fries in cold water to remove excess starch, then drain and dry thoroughly with a towel.

    First Fry

    In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C). Fry the potatoes in batches for about 4-5 minutes until they are soft but not browned. Remove the fries and drain on paper towels.

    Cool the Fries

    Let the fries cool for at least 30 minutes. This step is crucial for achieving a crispy texture in the second fry.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the cooled potatoes in batches again for about 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt immediately.

    Combine Ingredients

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and black pepper.

    Whisk Together

    Using a whisk or a fork, mix all the ingredients until smooth and well combined. Adjust the seasoning to taste.

    Chill

    Cover the mayonnaise and refrigerate for at least 30 minutes to allow flavors to meld.
