Method
Prepare the Rack of Lamb

Season the Rack
In a spice grinder, combine juniper berries, black peppercorns, and salt. Grind until fine. Rub the mixture all over the rack of lamb.

Sear the Lamb
Heat olive oil in a large skillet over medium-high heat. Once hot, add the rack of lamb and sear for 3-4 minutes on each side until browned.

Roast the Lamb
Transfer the seared rack of lamb to a preheated oven at 200°C (400°F) and roast for 15-20 minutes for medium-rare, or until the internal temperature reaches 57°C (135°F).

Make the Pecorino Whipped Ricotta

Whip the Ricotta
In a mixing bowl, combine ricotta cheese, grated pecorino cheese, olive oil, salt, and black pepper. Use an electric mixer or a whisk to whip the ingredients together until smooth and creamy.
Serve the Dish

Plate the Dish
Once the lamb is done roasting, let it rest for 5 minutes. Slice the rack into chops and serve on a plate with sautéed mushrooms on the side and a generous dollop of pecorino whipped ricotta.
