Preparation of Vegetables

    Chop the Vegetables

    Wash all vegetables thoroughly. Slice the zucchini and red onion into 1/2 inch thick rounds. Cut the bell peppers into strips, remove seeds and stems. Slice the mushrooms in half if they are large, and trim the ends of the asparagus.

    Prepare Cherry Tomatoes

    Leave the cherry tomatoes whole, they can be grilled as they are.

Marinade Preparation

    Mix Marinade

    In a large bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, black pepper, and dried Italian herbs until well combined.

Marinating the Vegetables

    Combine Vegetables and Marinade

    Add all of the chopped vegetables to the bowl with the marinade. Toss until the vegetables are evenly coated with the marinade. Cover the bowl with plastic wrap and let it marinate for at least 30 minutes at room temperature.

Grilling

    Preheat Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Vegetables

    Place the marinated vegetables directly on the grill grates or use a grill basket for smaller pieces. Grill each vegetable for about 4-6 minutes on each side, or until they are tender and have grill marks.

    Remove from Grill

    Once cooked, transfer the grilled vegetables to a platter and let them rest for a few minutes before serving.
