Calamari
Marinara Sauce
Method
Calamari Preparation
- 1
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to remove excess moisture which is crucial for a crispy texture.
- 2
Mix Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure even distribution of the seasonings.
- 3
Set Up Breading Station
Set up a breading station with three bowls: one with the dry flour mixture, one with the beaten eggs, and one with panko breadcrumbs. This will streamline the breading process.
- 4
Bread the Calamari
Dip each calamari ring into the flour mixture, shaking off any excess. Then, dip it into the beaten eggs, letting any excess drip off. Finally, coat it in panko breadcrumbs, pressing gently to ensure the crumbs adhere.
- 5
Heat Oil
In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 6
Fry the Calamari
Carefully add the breaded calamari rings into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce Preparation
- 7
- 8
Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, then add dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.
- 9
Simmer Sauce
Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally. This will help to meld the flavors together.
- 10
Adjust Seasoning
Taste the sauce and adjust the seasoning if necessary. Add red pepper flakes to taste for a bit of heat.
