Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into it. Gradually mix the flour into the eggs using a fork until a rough dough forms.

    Transfer the dough to a floured surface and knead it for about 5-7 minutes until smooth. Wrap it in plastic wrap and let it rest for at least 30 minutes.

    Cook the Duck

    In a large pot, add the duck leg quarters and cover with chicken stock. Add onion, carrot, celery, garlic, thyme, bay leaf, salt, and black pepper. Bring to a simmer, cover, and cook on low heat for about 2 hours until the duck is tender.

    Shred the Duck

    Remove the duck from the pot and let it cool slightly. Shred the meat from the bones and discard the skin and bones. Reserve the cooking liquid.
