Prepare the protein
If using chicken, pound the chicken breast to an even thickness and season both sides with salt, black pepper, garlic powder, and paprika. If using beef, season the steak similarly.

Slice the vegetables
Slice the sweet bell peppers and onion into thin strips for even cooking.

Cook the protein
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken or beef and cook for 5-7 minutes on each side (or until cooked through and internal temperature reaches 165°F for chicken or 145°F for beef). Remove from skillet and let rest.

Sauté the vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced onions and cook for about 3-4 minutes until they start to become translucent. Then, add the sliced sweet peppers and continue to sauté for another 5 minutes, stirring occasionally, until the peppers are tender.

Assemble the dish
Slice the cooked chicken or beef into strips and return to the skillet with the sautéed vegetables. Top with provolone cheese and cover the skillet for 2-3 minutes to melt the cheese.

Once the cheese is melted, serve the dish warm. It can be served in a bowl or on a plate with a side of rice or bread.
