Method

Preparation

1

Prepare the Chicken

Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in all-purpose flour, shaking off the excess.

2

Sauté the Chicken

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.

Cooking

3

Cook the Mushrooms and Garlic

In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced mushrooms and sauté for about 4-5 minutes, until they are browned and tender. Add the minced garlic and cook for an additional minute.

4

Deglaze with Marsala Wine

Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits. Allow the wine to simmer for about 2-3 minutes, reducing slightly.

5

Add Chicken Broth

Stir in the chicken broth and bring the mixture to a simmer. Return the chicken breasts to the skillet, spooning the sauce over them. Cook for another 5 minutes until the sauce has thickened slightly.

Serving

6

Garnish and Serve

Sprinkle the chopped fresh parsley over the chicken and sauce. Serve hot with your choice of side dishes, such as pasta or mashed potatoes.
