Preparation of Pork

    Marinate the Pork

    In a bowl, mix 2 tablespoons of olive oil, salt, black pepper, and red pepper flakes. Rub this mixture all over the pork tenderloin. Let it marinate for at least 30 minutes.

    Sear the Pork

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated pork tenderloin and sear on all sides until browned, about 3-4 minutes per side.

    Finish Cooking the Pork

    Reduce the heat to medium-low, cover the skillet, and cook the pork for an additional 15-20 minutes or until the internal temperature reaches 145°F (63°C). Remove from heat and let it rest for 10 minutes before slicing.

Cooking the Vegetables

    Prepare the Broccoli Rabe

    While the pork is resting, bring a pot of salted water to a boil. Add the broccoli rabe and blanch for 2-3 minutes until bright green and tender. Drain and set aside.

    Sauté the Vegetables

    In the same skillet, add the minced garlic and sliced long hot peppers. Sauté for 2 minutes until fragrant. Then add the blanched broccoli rabe and sauté for an additional 3-4 minutes. Drizzle with balsamic vinegar and stir to combine.

Serving

    Plate the Dish

    Slice the rested pork tenderloin and serve it alongside the sautéed broccoli rabe and long hot peppers. Drizzle any remaining juices from the skillet over the dish for added flavor.
