Preparation of Ingredients

Slice the Rib Eye Steak
Using a sharp knife, thinly slice the rib eye steak against the grain into strips. Aim for slices about 1/4 inch thick.

Prep the Vegetables
Finely chop the onion and bell pepper. Set aside for later use.

Slice the Pepperoni
If using whole pepperoni slices, cut them into smaller strips or leave them as is based on your preference.

Cook the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until they are softened and beginning to caramelize, about 5-7 minutes.

Melt the Cheese
Reduce the heat to medium-low. Lay the provolone cheese slices over the steak and pepperoni mixture, cover the skillet with a lid, and let it cook until the cheese is melted, about 2-3 minutes.

Prepare the Rolls
While the cheese is melting, slice the sub rolls lengthwise without cutting all the way through. Optionally, you can toast them lightly on a skillet or in the oven.

Assemble the Sandwiches
Once the cheese has melted, use a spatula to scoop the steak, pepperoni, and cheese mixture into the prepared sub rolls. Serve immediately.
