Pasta Preparation

  1. 1

    Boil Water

In a large pot, bring salted water to a boil.

  2. 2

    Cook Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente.

  3. 3

    Reserve Pasta Water

Before draining, reserve about 1 cup of the pasta cooking water.

  4. 4

    Drain Pasta

Drain the spaghetti and set aside, but do not rinse.

Sauce Preparation

  1. 5

    Cook Pancetta

In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes.

  2. 6

    Mix Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

  3. 7

    Combine Pasta and Pancetta

Once the pancetta is crispy, add the drained pasta to the skillet and stir to combine.

  4. 8

    Add Egg Mixture

Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce, adding reserved pasta water as needed to reach desired consistency.

  5. 9

    Season

Taste and adjust seasoning with salt and additional black pepper if needed.
