Panna Cotta Base

Prepare the Gelatin
In a small bowl, combine the cold water and gelatin powder. Let it sit for about 5-10 minutes until it blooms (absorbs the water).

Heat the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla extract. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

Combine Gelatin with the Cream Mixture
Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture, whisking until fully dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving cups or molds. Let them cool at room temperature for about 30 minutes.

Chill the Panna Cotta
Refrigerate the panna cotta for at least 4 hours, or until set.
Berry Sauce

Prepare the Berries
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring gently, until the berries break down and the sauce thickens slightly, about 10-15 minutes.

Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature. Then, strain if desired for a smoother texture.

Serve
Once the panna cotta has set, remove from the refrigerator and top with the berry sauce before serving.
