Method

Chicken Preparation

  1. 1

    Marinate the Chicken

In a small bowl, mix together garlic powder, paprika, lemon juice, and dried oregano. Rub the mixture over the chicken breasts. Let it marinate for at least 30 minutes in the refrigerator.

  2. 2

    Grill the Chicken

Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before chopping into bite-sized pieces.

Salad Assembly

  1. 3

    Prepare the Vegetables

Wash and chop the romaine lettuce into bite-sized pieces. Halve the cherry tomatoes, slice the cucumber, thinly slice the red onion, and grate the carrot.

  2. 4

    Mix the Salad

In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, and carrot.

Dressing Preparation

  1. 5

    Make the Dressing

In a small bowl, whisk together balsamic vinegar, honey, and Dijon mustard until well combined.

  2. 6

    Dress the Salad

Drizzle the olive oil, salt, and black pepper over the salad. Pour the dressing over the salad and toss gently to combine.

Final Assembly

  1. 7

    Combine Chicken and Salad

Add the grilled and chopped chicken to the salad mixture. Toss everything together until well mixed.

  2. 8

    Serve

Serve immediately on plates or in bowls. Enjoy your grilled chicken salad!
