Create the Gelato Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat while stirring until the sugar is completely dissolved and the mixture is warm but not boiling.

Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.

If adding cocoa powder or fruit, blend them into the mixture during the last few minutes of churning. If using chocolate chips, fold them in after churning.
