Chicken Scaloppine

Method

Preparing Chicken Scaloppine

    Prepare Chicken

    Place chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet until about 1/2 inch thick.

    Season and Dredge

    In a shallow dish, mix flour, salt, and black pepper. Dredge each piece of chicken in the flour mixture, shaking off excess.

    Cook Chicken

    In a large skillet, heat olive oil and butter over medium heat. Add chicken and cook for about 4 minutes on each side or until golden brown and cooked through. Remove chicken from skillet and keep warm.

    Make Sauce

    In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add lemon juice and chicken broth, scraping up brown bits from the skillet. Let it simmer for 3-4 minutes.

Preparing Crab Topping

    Mix Topping Ingredients

    In a bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, lemon juice, and chopped chives. Mix well until all ingredients are incorporated.

    Fold in the shredded cheddar cheese into the crab mixture.

    Heat Topping

    Preheat oven to 375°F (190°C). Spread the crab mixture over the cooked chicken in the skillet or a baking dish. Bake for about 10-12 minutes until the topping is bubbly and golden.

    Serve the Chicken Scalessas hot with the bubbling crab topping. Garnish with additional chives if desired.
