Method

Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Bread the Chicken

Set up a breading station: Place flour in one shallow dish, beat eggs in a second shallow dish, and mix breadcrumbs with grated Parmesan in a third shallow dish. Dredge each chicken breast in flour, dip into beaten eggs, and then coat with the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure an even coating.

Cooking the Chicken

  1. 3

    Fry the Chicken

In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove from skillet and drain on paper towels.

Making the Sauce

  1. 4

    Cook the Sauce

In the same skillet, add more olive oil if necessary and sauté the minced garlic until fragrant (about 30 seconds). Add the crushed tomatoes, oregano, basil, sugar, and salt. Stir well and let simmer for about 10 minutes.

Assembly

  1. 5

    Assemble the Dish

In a baking dish, place the fried chicken breasts. Spoon the marinara sauce generously over each piece and top with shredded mozzarella cheese.

  2. 6

    Bake

Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

  3. 7

    Garnish and Serve

Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.
