    Prepare the Salad Base

    Wash and chop the romaine lettuce into bite-sized pieces. Halve the cherry tomatoes, slice the cucumber, thinly slice the red onion, and chop the bell peppers. Combine all salad base ingredients in a large mixing bowl.

Steak Cooking

    Cook the Rib Eye Steak

    Season the rib eye steak with salt and black pepper. In a skillet, heat the olive oil over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest for 5 minutes before chopping into bite-sized pieces.

    Make the Dressing

    In a small bowl, whisk together 3 tablespoons of olive oil, red wine vinegar, Dijon mustard, honey, and minced garlic. Season with salt and black pepper to taste.

Assembling the Salad

    Assemble the Cheesesteak Salad

    Add the chopped steak to the salad base in the mixing bowl. Pour the dressing over the salad and toss gently to combine. Top with shredded provolone cheese and sprinkle fresh parsley on top before serving.
