Preparation

    Slice the Steak

    Using a sharp knife, thinly slice the rib eye steak against the grain into strips.

    Prepare the Vegetables

    Slice the onion, bell pepper, and mushrooms into thin strips.

Cooking

    Cook the Vegetables

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and bell peppers. Sauté for about 5 minutes until they start to soften.

    Add Mushrooms

    Add the sliced mushrooms to the skillet and continue to cook for another 3-4 minutes until all the vegetables are tender. Remove them from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced rib eye steak and season with salt, black pepper, and garlic powder. Cook for 3-4 minutes until the steak is browned and cooked to your desired doneness.

    Combine Ingredients

    Add the sautéed vegetables back into the skillet with the steak. Mix well and let them cook together for an additional minute.

    Assemble the Cheesesteaks

    Place the cooked steak and vegetable mixture onto the hoagie rolls. Top each cheesesteak with 2 slices of cheese.

    Melt the Cheese

    If desired, place the assembled cheesesteaks under a broiler for 1-2 minutes to melt the cheese.

    Serve the cheesesteaks hot, with optional jalapeños and hot sauce on the side if desired.
