Crust Preparation

Preheat Oven
Preheat your oven to 325°F (160°C).

Combine Crust Ingredients
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create a uniform layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool while you prepare the filling.
Filling Preparation

Beat Cream Cheese
In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream, continuing to mix until fully combined and smooth.

Add Vanilla and Eggs
Mix in the vanilla extract. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust, spreading it evenly.

Bake the Cheesecake
Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool the Cheesecake
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then remove from the oven and let cool to room temperature.

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight, before serving.
