Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the buttermilk with the cleaned and cut calamari. Allow it to marinate for at least 30 minutes.

    Mix Dry Ingredients

    In another bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Coat the Calamari

    After marinating, remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are fully coated. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Cook the Sauce

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Season

    Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well and let simmer for 15-20 minutes, allowing the flavors to meld.

    Finish the Sauce

    Stir in the chopped fresh basil just before serving for a burst of freshness.
