Prepare the Filling
In a bowl, combine the grated Gruyère cheese and diced guava paste. Mix well and set aside.

Make the Beet Sauce
In a blender, combine the roasted diced beets, olive oil, vinegar, salt, and black pepper. Blend until smooth and adjust seasoning as necessary. Set aside.

Assemble the Pastries
Preheat your oven to 375°F (190°C). Lay out a sheet of filo dough and brush with melted butter. Layer another sheet on top and brush again. Place a spoonful of the cheese and guava mixture in the center, then fold the dough over to create a triangle or pocket. Repeat with remaining ingredients.

Bake the Pastries
Place the assembled pastries on a baking sheet lined with parchment paper. Brush the tops with additional melted butter. Bake in the preheated oven for about 15-20 minutes or until golden brown.
