Method
Prepare the Shrimp

Season the Shrimp
Pat the colossal white shrimp dry with paper towels. Season with salt and black pepper.
Make the Batter

Combine Ingredients
In a bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the cold water until a smooth batter forms.
Prepare the Aioli

Mix Ingredients
In a small bowl, combine mayonnaise, sweet Thai chili sauce, lime juice, and minced garlic. Mix well and set aside.
Fry the Shrimp

Heat Oil
In a deep skillet, heat vegetable oil over medium-high heat until hot.

Fry Shrimp
Dip each seasoned shrimp into the batter, allowing excess to drip off. Carefully place in the hot oil and fry in batches for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.
Serve

Serve the crispy shrimp hot with a side of sweet Thai chili aioli for dipping.
