Preparation

  1. 1

    Prepare the Ingredients

Rinse and drain the black beans. Chop the bacon, jalapeño, and white onion. Mince the garlic.

  2. 2

    Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

  3. 3

    Sauté the Vegetables

In the same pot, add the chopped onion and jalapeño. Sauté until the onion is translucent. Add minced garlic and sauté for an additional minute.

  4. 4

    Combine Ingredients

Add the black beans, vegetable broth, epazote leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Final Touches

  1. 5

    Blend the Soup

Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend to your desired consistency.

  2. 6

    Prepare Tortilla Strips

While the soup is simmering, heat oil in a skillet. Cut corn tortillas into strips and fry until crispy. Drain on paper towels.

  3. 7

    Serve

Ladle the soup into bowls. Top with crispy bacon, a dollop of sour cream, and crispy tortilla strips.
