    Make the Tart Crust

    In a mixing bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough holds together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

    Bake the Tart Crust

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork. Bake for 20-25 minutes or until golden. Let it cool.

    Prepare the Custard Filling

    In a saucepan, heat milk and sugar over medium heat until sugar dissolves. In a bowl, whisk together egg yolks and cornstarch. Gradually add hot milk mixture to egg mixture, whisking constantly. Return to saucepan and cook until thickened. Stir in vanilla and butter. Let it cool.

    Assemble the Tart

    Pour the cooled custard into the baked tart shell. Arrange the fresh fruits on top as desired. Chill the tart in the refrigerator for at least 1 hour before serving.
