In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

Prepare the Egg Mixture
In another bowl, whisk the eggs and granulated sugar together until pale and fluffy. Stir in the vanilla extract.

Combine Chocolate and Egg Mixture
Slowly fold the melted chocolate into the egg mixture until well combined.

Gently fold in the whipped cream in batches, being careful not to deflate the mixture.
