Cooking Instructions
- 1
Prepare the Salmon
Preheat your wood oven to 400°F (200°C). Season the salmon fillets with salt and black pepper. Drizzle with olive oil and set aside.
- 2
Cook the Rice Pilaf
In a medium saucepan, bring 2 cups of water to a boil. Add the jasmine rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked. Fluff with a fork and set aside.
- 3
Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed julienne vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper, and remove from heat.
- 4
Make the Lemon Butter Sauce
In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1 minute. Stir in lemon juice and chopped parsley. Remove from heat and set aside.
- 5
Bake the Salmon
Place the seasoned salmon fillets on a baking sheet and transfer to the wood oven. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 6
Serve
On each plate, serve a portion of jasmine rice pilaf, top with sautéed vegetables, and place a salmon fillet. Drizzle with lemon butter sauce before serving.
