    Prepare the Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface to about 1/8 inch thickness. Cut into small squares or circles to form crackers.

    Bake the Crackers

    Place the cut pastry shapes on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool.

    Make the Mascarpone Mixture

    In a bowl, combine the mascarpone cheese, crème fraîche, lemon zest, salt, and black pepper. Mix until smooth and well combined.

    Assemble the Canapés

    Spread a generous amount of the mascarpone mixture onto each puff pastry cracker. Top with pieces of smoked salmon and garnish with chopped chives.

    Arrange the canapés on a serving platter and serve immediately.
