Prepare the Prime Rib
Preheat your oven to 250°F (120°C). Season the prime rib with herb seasoning, ensuring to rub it all over the meat. Place it in a roasting pan.

Slow Roast the Prime Rib
Roast the prime rib in the preheated oven for about 3-4 hours, or until it reaches an internal temperature of 130°F (54°C) for medium-rare. Let it rest for 20-30 minutes before slicing.

Prepare the Potatoes
Toss the cubed potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven alongside the prime rib for about 45 minutes, or until golden and tender.

Cook the Seasonal Vegetables
In the last 15 minutes of roasting, add the seasonal vegetables to the oven to cook until tender.

Make the Shrimp Scampi
In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Pour in white wine and lemon juice, simmer for another 2 minutes. Stir in fresh parsley before serving.

Slice the prime rib and serve it alongside the roasted potatoes, seasonal vegetables, and drizzle with herb veal jus. Place the shrimp scampi on the side.
