Roast the Mushrooms
Preheat the oven to 400°F (200°C). Toss the sliced mushrooms with 1 tablespoon of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20 minutes or until golden brown.

Caramelize the Onions
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for about 15-20 minutes until they are deep golden brown and caramelized.

Combine Ingredients
Add the minced garlic to the skillet with the caramelized onions and sauté for 1 minute. Pour in the Marsala wine and let it simmer until reduced by half. Stir in the sundried tomatoes, roasted mushrooms, and arugula. Add the drained pasta and a splash of reserved pasta water to help combine everything.

Divide the pasta into serving bowls and top with herbed mascarpone cheese before serving.
