Prepare the Chicken
Preheat the oven to 400°F (200°C). In a shallow bowl, mix together the Parmesan cheese, breadcrumbs, salt, and black pepper. Brush the chicken breasts with olive oil and then coat them with the Parmesan mixture. Place them on a baking sheet lined with parchment paper.

Roast the Potatoes
Cube the potatoes and toss them with olive oil, fresh herbs, salt, and pepper. Spread them on another baking sheet and place them in the oven alongside the chicken. Roast for about 25-30 minutes or until golden and tender.

Cook the Vegetables
In the last 15 minutes of cooking, add the seasonal vegetables to the oven on a separate baking sheet. Drizzle with olive oil, season with salt and pepper, and roast until slightly charred and tender.

Prepare the Dijon Sauce
In a small saucepan, combine the Dijon mustard with a little water and heat over low heat, stirring until smooth. Adjust the consistency as needed with more water.
